Nutty Brown Cake

I really miss being with my PAPPA for his birthday. I used to do all these silly things that made him angry when I was a kid and used to apologize for all that I have done on his birthday. I used to write how much my DAD meant for me on a greeting card and give him small presents (like Pen.. haha) on his birthday. Today, the September 6, 2011 is my PAPPA’s birthday and I want to make it special for him. My Dad is a fan of anything that is sweet and of course cakes. I feel bad for not being with him on his special day, but I am sure he is going to enjoy reading this. This yummy cake is dedicated to my real HERO, my PAPPA. Love you Pappa! Aaaappyyyyyy Buddaaaaaaayyyyyyyy!!!! Have a Wonderful one!!!

Ingredients:

1 1/4 cup Sugar

4 eggs (At room temperature)

1 tsp Vanilla Extract

3/4 cup melted Butter (1 stick – At room temperature)

1 1/2 cup All Purpose Flour (Maida)

1tsp Baking powder

Oreos or Cookies or your favorite Nuts or all of them

  • Preheat oven to 360 Degree F.
  • Sift all purpose flour and baking powder.
  • In a mixing bowl, beat the egg yolks & beat till frothy & fluffy. Combine half of sugar & continue to mix till the mix is thicker. Add the butter, vanilla extract & beat till it almost doubles in amount.
  • In another bowl beat the egg white till bubbly. Gradually beat in the remaining sugar, until thick and meringue-like & peaks form. This might take about 5-10 minutes.
  • Very gently fold in the egg yolks into the egg whites.
  • Mix all purpose flour and baking powder in a bowl.
  • Fold in the flour mixture with a spatula in to the egg mix. Do not stir or move too much, so as not to let the air escape.
  • Mix oreos, cookies and nuts in a little flour and fold them in to the cake mixture. Again, do not stir or move too much.
  • Lightly grease the cake pan with butter and sprinkle little flour on it.
  • Pour the mix carefully in the pan & put it in the oven.
  • Bake for 30 -35 minutes or till the toothpick comes out clean when inserted at the center of the cake. Cool on a wire rack.
